ZUCCHINI CASSEROLE 
1 lb. ground beef
1 tsp. chili powder
1/2 tsp. oregano
1 tbsp. oil or butter
1 med. onion, diced
2 c. raw unpeeled zucchini, sliced
2 c. cooked or peeled tomatoes
1/3 c. rice, uncooked
Cheese on top

Brown lean ground beef. Add chili powder and oregano. Pour into bowl. Set aside.

In same pan add oil, add onion and zucchini; cook 10 minutes. Add tomatoes, cook 10 minutes more. Salt and pepper to taste.

Pour 1/2 tomato mixture in 2 quart casserole. Sprinkle rice on top. Add meat. Rest of tomatoes. Cover. Bake at 350 degrees for 45 minutes. Uncover, add cheese on top 10 more minutes.
