RICE CASSEROLE ITALIANO 
1 lb. sliced fresh zucchini
1 lb. lean ground beef
1 c. chopped onions
1 clove garlic, crushed
1 tsp. basil
1/2 tsp. oregano
1/4 tsp. black pepper (optional)
2 c. cooked rice
1 (8 oz.) can tomato sauce
1 c. cottage cheese
1 egg, slightly beaten
1 c. (or more) grated cheddar cheese

Cook or steam sliced zucchini 3-5 minutes and drain. Cook meat, onion, garlic and seasonings in a large skillet. Stir in cooked rice and tomato sauce. Blend cottage cheese and egg.
