SPANISH RICE 
3 tbsp. butter
1/3 c. chopped onion
1/3 c. chopped green pepper
1 c. pkg. precooked rice
1 c. water
1 c. canned tomatoes
2 tsp. sugar
1 tsp. salt
1/8 tsp. pepper
1 bay leaf
3 tbsp. Parmesan cheese

Heat butter in skillet. Add onion and green pepper, and cook until onion is yellow. Add precooked rice, water, tomatoes, sugar, salt, pepper and bay leaf and bring to a boil. Cover and simmer for 10 to 15 minutes or until rice is tender when pressed between fingers. Remove bay leaf. Serve hot and sprinkle with cheese.
