SPANISH RICE CASSEROLE 
1 lb. ground beef or hamburger
2 tbsp. onion, finely chopped
1 tbsp. butter
1 c. rice
1 #2 can tomatoes
1 tsp. salt
2/3 c. cheese, grated

Cook rice in rapidly boiling salted water for 15 minutes. Meanwhile, saute meat and onion until meat loses its red color and onion is limp. Drain rice and combine with remaining ingredients, except cheese. Top with cheese. Bake at 350 degrees for 1 hour.
