BAKED BARLEY 
2 tbsp. butter
2 med. onions, chopped
1 can mushrooms
1 3/4 c. barley
4 c. chicken broth
Salt to taste

Brown onion and mushrooms in melted butter. Remove from heat and put in a casserole dish. Add barley to skillet and brown. Stir to prevent burning. When brown place in casserole with onions, mushrooms, salt, broth. Cover and bake in a 350 degree oven for one hour. Serves 8 to 10.
