CHARCOAL GRILLED AMBERJACK 
Amberjack, about 1/2 lb. per person
Zataran seafood seasoning (red)
Garlic salt
Ground cayenne pepper
Paprika
Butter

Fillet Amberjack to about 3/4 in thick or less. Sprinkle generously with seafood seasoning. Brush with melted butter, lay on grill over hot coals. Then sprinkle with seafood seasoning again, garlic salt, paprika and cayenne pepper (use pepper carefully). Cook for about 1-2 minutes. Turn and repeat seasonings. Cook for about 1 1/2-2 minutes or until as done as you want. Serve immediately. Good with French fries, cole slaw, hush puppies.
