ZUCCHINI NUT LOAF | |
3 eggs, well beaten 1 c. oil 2 c. sugar 2 c. zucchini, grated 1 tbsp. vanilla 3 c. flour 1 tsp. baking soda 1/2 tsp. baking powder 2 tsp. cinnamon 1 tsp. salt 1/3 to 1/2 c. chopped pecans Combine eggs, sugar, oil, zucchini and vanilla. Add dry ingredients to creamed mixture. Stir in pecans. Pour batter into 2 greased loaf pans. Bake 1 hour in 325 degree oven. |
