STUFFED BELL PEPPERS WITH EQUAL 
4 sm. green peppers
1/2 lb. lean ground beef
Dash white pepper
1 c. unsalted whole tomatoes, chopped and mixed with 1 packet of Equal
1/4 c. sm. yellow onion, chopped
3/4 c. unsalted defatted beef broth
1 packet Equal

Wash the green peppers and remove the seeds. Set aside. Brown the ground beef in a dry, hot pan and season with pepper. Drain off all the fat. Set aside.

Combine half the chopped tomatoes and all the chopped onion. Simmer for a few minutes. Combine the ground meat and the tomato-onion mixture; spoon mixture into peppers. Place the peppers in a shallow pan and pour the remaining tomatoes and the beef broth around the peppers.

Cover the pan with aluminum foil and bake for 45-50 minutes in a preheated 350 degree oven. Cool slightly before serving. Reduce the liquid in the pan by half; add Equal. Glaze each pepper with a little sauce before serving.
