CHICKEN WITH GINGER 
3 boneless chicken breasts
3 crushed garlic cloves
1/3 c. fresh grated ginger
3 tbsp. soy sauce
1 tsp. salt
1/2 tsp. black pepper
1 tbsp. cornstarch
3 tbsp. oil
1/2 c. water

(You can substitute pork for chicken to make Pork With Ginger.)

Thin slice chicken breasts. Put chicken and soy sauce in small bowl. Stir. Let stand 15 minutes.

Heat wok or pan. Add oil. Over medium heat, add grated garlic and ginger. Stir frequently. When ginger and garlic start to turn golden brown, add chicken. Stir in salt and pepper. When chicken is cooked, add 1/2 cup water. Bring water to a boil.

To thicken sauce, add cornstarch which has been mixed with a little water. When the sauce is bubbling, turn off stove. Let stand 5 minutes before serving.
