CHICKEN CATCHIATORE 
2-3 lbs. frying chicken pieces
Salt and pepper
2 tbsp. oil
1 sm. onion, sliced into rings
1 1/2 c. ready made spaghetti sauce
1/4 c. sherry or water

Wash and pat chicken pieces dry. Sprinkle with salt and pepper. Brown in 10 inch skillet in oil for 10 minutes on each side. Drain excess fat.

Arrange onion rings over browned chicken. Pour sauce mixed with sherry or water over all. Cover and simmer 30 to 40 minutes until tender. Baste once or twice. 4-6 servings.
