BERRY-FULL BLUEBERRY MUFFINS | |
2 c. all purpose flour 1/4 c. sugar 1 tbsp. baking powder 1/2 tsp. salt Grated peel of 1 lemon 1 egg 1 c. milk 1/4 c. vegetable oil 1 pt. fresh blueberries, rinsed and drained Preheat oven to 400 degrees. Grease 12 (2 3/4 inch) muffin pan cups. In large bowl, mix flour, sugar, baking powder, salt and lemon peel. In small bowl beat together egg, milk and oil; pour over flour mixture. Add blueberries. Stir just until flour is moistened. (Do not overmix, or muffins will be tough). Spoon batter into greased muffin cups. Bake at 400 degrees for 20 to 25 minutes or until tops are golden brown. Immediately remove muffins from pan. Serve warm if desired. Makes 12. |
