PUFFED PANCAKE WITH STRAWBERRIES 
6 eggs
1 c. milk
1/4 c. orange-flavored liqueur or orange juice
1/2 c. sugar
1 c. flour
1/4 tsp. salt
1/4 lb. butter
Strawberry sauce
Powdered sugar, if desired
Sour cream, if desired

STRAWBERRY SAUCE:

2 (10 oz.) pkg. frozen strawberries in syrup
2 tbsp. orange-flavored liqueur or orange juice
A little cornstarch mixed with water

In blender or large bowl, mix eggs, milk, liqueur or orange juice, sugar, flour and salt until blended. Preheat oven to 425 degrees. Melt butter in 9x13 inch pan in oven until it sizzles. Do not let brown. Remove from oven and immediately pour batter over butter. Bake for 20 minutes or until puffed and brown.

Meanwhile, prepare sauce. Remove pancake from oven. Sprinkle with XXX sugar, if desired. Pancake falls quickly, so serve immediately with warmed sauce and sour cream, if desired. Serves 4-5.

NOTE: Pancakes can be baked in pie plates. Melt 2 tablespoons butter in each plate and pour about 1 cup batter in each. 4-5 plates.

STRAWBERRY SAUCE: Heat strawberries in small pan until hot. Stir in liqueur or orange juice. Thicken with cornstarch mixture.

These were great! I made my own strawberry topping however - simple but delicious - 1/2 lb. sliced strawberries sauteed on low heat with 1/3 cup sugar and 1-1/2 tsp. vanilla! These were a big hit however they do fall really quickly but they are still yummy even when they start to look like a bowl :)
