PUMPKIN WHOOPIE PIES 
Filling:

2 egg whites
2 tsp. vanilla
2 tbsp. milk
4 tbsp. flour
1 1/2 c. vegetable shortening
1 box (1 lb.) confectionary sugar

Beat egg whites until stiff. Add vanilla, milk and flour; beat well. Add shortening and sugar and beat until fluffy. Place between two cookies.

Cookies:

1 tsp. baking soda
3 c. flour

In a large bowl mix together the pumpkin, yolks, brown sugar, vanilla and oil. In a separate bowl, mix together the spices, salt, baking powder, baking soda and flour. Gradually add the flour mixture to the pumpkin mixture. Drop by tablespoonfuls onto a greased cookie sheet.

Bake at 350°F for 8-10 minutes. Cool and frost.
