CALIFORNIA FRUIT CAKE | |
3/4 c. flour 1 c. brown sugar 1/4 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 3 beaten eggs 1 tsp. vanilla 2 c. dates 1 1/2 c. apricots 2 c. walnuts Leave fruit and nuts whole. (Dates can be diced.) Mix fruit, nuts and dry ingredients. Add eggs and vanilla. (It will look sparse.) Spread into 2 small loaf pans that have been lined with greased wax paper. Press down any whole fruit that is above batter. Bake. Place pan of hot water in oven for moisture. If necessary, cover pans with foil or parchment to prevent top from over browning. Bake at 300 degrees for approximately 1 hour. |
