OATMEAL CRISPIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
3 c. oatmeal
1/2 c. chopped walnuts, raisins, or coconut

Thoroughly cream shortening and sugars, add eggs and vanilla and beat well. Add sifted dry ingredients, oatmeal and nuts. Mix well. Can be shaped into rolls, wrapped in wax paper and chilled overnight. Slice 1/4 inch thick; bake on ungreased cookie sheet in moderate oven 350 degrees for 10 minutes. Makes 5 dozen. May also be made as drop cookies if in a hurry.
