CANDIED YAMS 
2-4 lb. yams
1 c. sugar
1 stick butter
1 tsp. allspice
1 tsp. vanilla

Par-boil yams and slice to place in shallow pan with enough water to cover yams. Sprinkle sugar over top of yams. Cut butter into portions and top yams. Bake at 425 degrees for 20 minutes.

SAUCE:

Make a thin sauce with water and sugar. Cook until it forms a light syrup. Add 1 teaspoon allspice and vanilla. Pour sauce over yams. Bake for 10 minutes.
