GREEN BEAN, TOMATO & SALAMI
SALAD
 
1/2 lb. salami
1 lb. green beans
1/4 c. sliced green onion
3 tomatoes, peeled

DRESSING:

1 tbsp. Dijon style mustard
1 tbsp. white wine vinegar
Dash salt
Dash freshly ground pepper
1/4 c. olive oil

Tips: For best flavor purchase salami that is in chunk form rather than already sliced.

1. Cut salami into 2 inch pieces. Cut pieces into 1/4 inch thick sticks. Put into mixing bowl.

2. Trim tips and ends of green beans. Cut into pieces about 3 inches long. Steam for 10 minutes or until beans are tender. Drain. Combine beans with salami in a bowl. Add the green onion.

3. Cut tomatoes into wedges. Add to vegetables and salami.

4. For dressing mix mustard and vinegar into small mixing bowl. Add salt and pepper. Whisk in olive oil until mixture is creamy. Pour over salami and vegetables. Turn over gently until all pieces are coated. Cover and refrigerate for 2 hours or more.
