GREEN BEAN & WALNUT SALAD 
1 1/2 lb. fresh green beans
1/2 c. fresh mint leaves
3/4 c. olive oil
1/4 c. white wine vinegar
3/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. crushed garlic
1 c. coarsely chopped walnuts
1 c. red onion slices
1 c. feta cheese, crumbled

Blanch green beans for 4-5 minutes. Chill. Chop mint leaves. Add to green beans. Set aside.

For Dressing: Combine oil, vinegar, salt, pepper and garlic. Add walnuts, red onion and feta cheese to beans. Pour dressing over bean mixture and toss to coat. Chill until ready to serve. Serves 4-6.
