BEAN SOUP 
Barley
Green split peas
Yellow split peas
Sm. lima
Pinto
Navy
Black-eyed
Lentil

Mix beans. Wash 2 cups bean mix. Cover with water. Add 1 tablespoon salt. Soak overnight or at least 3 hours. Put beans in 2 quarts water. Add:

A ham bone
Lg. can tomatoes (chopped)
1 lb. ham pieces or Polish sausage
1 clove garlic
1 whole onion
Juice of 1 lemon
Salt and pepper to taste

Simmer all day or at least 4 hours in covered pot.

Refrigerate overnight to improve flavor. Also freezes well. 12 servings.
