LOW-FAT EGGNOG | |
Over medium heat stir 4 cups skim milk; one 12 ounce can evaporated skim milk; one 8 ounce carton frozen egg product, thawed; and 1/2 cup sugar about 10 minutes or until slightly thickened. Do not boil. Stir over a bowl of ice water 2 minutes. Cover; chill 4 to 24 hours. Stir in 1/3 cup light rum and 1 teaspoon vanilla. Stir in more skim milk until of desired thickness. Sprinkle with ground nutmeg. Serves 12. |
