PECAN DROP COOKIES | |
2 c. sifted all-purpose flour 1/4 tsp. salt 1/2 c. soft butter (1 stick) 1/2 c. Wesson oil 1 c. confectioners' sugar (sifted) 2 tbsp. light cream 1 tsp. vanilla extract 1 c. chopped pecans or walnut nuts Preheat oven to 350 degrees. Sift flour with salt. Set aside. In large bowl at medium speed, beat butter, oil, sugar, cream and vanilla until smooth and creamy. Stir in flour mixture until well mixed. Stir in nuts. Drop by teaspoonfuls 2 inches apart on an ungreased cookie sheet. Top with pecan half. Bake 15 to 20 minutes until light brown. Remove to wire rack and cool. Makes 4 dozen. Easy and fast. |
