BRAN MUFFINS 
3 c. bran cereal (Kellogg's All Bran)
1 c. boiling water
1 1/2 c. white flour
1 c. whole wheat flour
1/2 tsp. cinnamon
2 1/2 tsp. baking soda
1 c. sugar
1/2 c. oil
2 egg whites
2 c. buttermilk (low-fat)
1 c. raisins

Pour boiling water over bran; stir. Cream sugar and eggs. Add oil and buttermilk together. Mix dry ingredients together, then add cereal. Stir in raisins. Bake at 350 degrees for 20 to 30 minutes. Makes 24 to 30 muffins.
