PEANUT BUTTERSCOTCH BARS
12 oz. pkg. butterscotch morsels
6 tbsp. butter
2 c. crushed graham cracker crumbs (about 22 crackers)
2 c. chopped peanuts
16 oz. cream cheese (softened)
1/2 c. sugar
4 eggs
1/4 c flour
2 tbsp. lemon juice

Preheat oven to 350 degrees. Combine the butterscotch morsels and butter and melt smooth. Stir in crumbs and peanuts with a fork until it forms small crumbs. Reserve two cups of this for topping, and press the rest into an ungreased 15 x 10 x 1 pan. Bake it at 350 degrees for 12 minutes.

Mix the cream cheese and the sugar. Add the eggs, one at a time, beating well after each addition. Blend in the flour and lemon juice then, and pour this over the hot crust. Sprinkle the top with the reserved crumbs, and bake it all for 25 minutes. Cool completely before cutting. Chill in refrigerator before you serve it.
