RICOTTA OR CREAM CHEESE TORTE 
Recipe for 12 crepes (using part whole wheat flour)
Skim or whole milk ricotta
Regular or light cream cheese
2 tbsp. sugar or honey
Milk
Jam or preserves
Fresh fruit

Make up a batch of crepes. Mix ricotta with cream cheese and a little milk, to make the mixture easy to spread. Stir in sugar or honey. Spread each crepe with some of the jam or preserves, and then some of the ricotta mixture. Stack the crepes to make a torte, ending with a plain crepe. Top with a dollop of cheese and decorate with fresh fruit. Slice into wedges to serve. Serves 4-6.
