BEEF STROGANOFF | |
1 lb. sirloin or round steak, cut in strips 3 tbsp. flour 3/4 tsp. salt 1/4 tsp. pepper 1/2 tsp. paprika 1/4 c. shortening 1/2 c. chopped onion 1 can beef consomme 1 c. water 1 lb. fresh mushrooms 1/2 c. sour cream 2 tbsp. chives, finely cut Brown floured beef in shortening or butter. Add onion and cook until soft. Add seasonings, beef broth, and water; cook covered for 1 1/2 hours (or in oven, covered). Add sauteed mushrooms; simmer. Add sour cream and chives. Heat through but do not boil. Serve over rice or noodles. Serves 4. (Triple recipe for 12 servings.) |
