HOT PEPPER AND ZUCCHINI OMELET 
1 sm. zucchini, sliced thin
2 med. hot peppers, chopped
2 tbsp. oil
3 lg. eggs, beaten
Salt, pepper, garlic salt, onion salt, to taste

Sauté zucchini and hot pepper in oil with seasonings in small frying pan. Add beaten eggs, turn heat to medium high. Pull egg mixture to middle of pan with spatula so omelet heats evenly. (This can be done a few times.) When omelet looks slightly solid, flip upside down onto dish and slide back into pan to cook other side, can be flipped over again to brown each side. Delicious hot or cold!
