PUMPKIN FRITTERS 
1 1/2 lb. can pumpkin (plain)
1 c. sugar
1 c. flour
3/4 tsp. vanilla extract
Pinch of salt
Vegetable oil for deep frying

Stir all ingredients until mixture is pasty. In a frying pan heat the oil (1 1/2 cup). Drop mixture by spoonfuls to fry. Fry until golden brown. Remove and drain on paper towel. Eat hot.
