FRENCH ONION SOUP 
4 lg. yellow onions
4 tbsp. butter
1 tbsp. flour
6 c. simmering beef broth
6 slices French bread
Grated Swiss cheese (3/4 c.)
1/4 c. grated Parmesan cheese

Peel onions and slice thinly. Separate into rings. Saute onion rings in hot butter until softened. Lightly stir in flour. Add onions to hot broth. Cover saucepan and simmer 20 minutes. Ladle soup into individual oven proof dishes. Place bread into each bowl. Sprinkle bread with combined cheeses. Place on a cookie sheet and brown the cheese under a preheated broiler for about 3 minutes until cheese is bubbling. Makes 6 servings.
