HOME BAKED BEANS 
2 lb. navy pea beans
1/2 lb. bacon
3 tsp. salt
2/3 c. dark brown sugar
1 tsp. dry mustard
1/3 c. molasses
1 onion, chopped
1 c. tomato juice

Soak the beans overnight in water plus 1 teaspoon baking soda. Wash 2 or 3 times, until the beans are clean.

Cover with clean, fresh water and simmer about 1/2 hour or until beans just start to turn tender. Do not overcook!

Transfer beans to a large roasting dish. Brown bacon slightly in a skillet, drain fat off and add all ingredients into the beans. Start baking at 350°F for about 1 hour. Then turn the oven to 300°F and bake another 1 1/2 hours. Turn the oven off and leave the beans to sit in the oven undisturbed for another 1/2 hour. If the beans look like juice is disappearing, add water during the baking time.
