AIOLI-GARLIC MAYONNAISE 
6-12 cloves garlic, peeled and minced
4 egg yolks at room temp.
1 c. olive oil
1/2 c. salad oil
Salt and pepper
1 tbsp. lemon juice (fresh) (or more)

Crush garlic in blender. Put egg yolks in blender and process. Add lemon juice, mix, oils. Add oils very slowly to blender while processing. When it becomes very thick the remaining oils may be added more quickly. Season with salt and pepper to taste.

Use as potato salad dressing, bread spread or dressing for fish and vegetables.
