LEMON AND OAT MUFFINS 
1 egg
1/2 c. milk
2 tbsp. brown sugar
2 tbsp. lemon juice
3/4 c. oatmeal
1 1/4 c. flour
1/4 c. vegetable oil
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
1 c. chopped apple
1/2 c. chopped nuts

Preheat oven to 400 degrees. In medium bowl, combine beaten egg, milk, oil and lemon juice. Add dry ingredients. Mix well. Add apples and nuts; batter will be thick. Spoon into paper-lined muffin cups. Bake until golden brown, perhaps 20 minutes. Spoon lemon icing over.

LEMON ICING:

1/2 c. powdered sugar
1 tbsp. lemon juice
1 tbsp. melted butter

Makes about 1/4 cup.
