NEW ENGLAND CLAM CHOWDER 
2 slices bacon
1 sm. minced onion
1 lg. diced potato
1 (8 oz.) can minced clams
1/2 c. water
3/4 c. evaporated milk
Salt & pepper

Dice bacon and brown. Remove bacon, pour off all fat except 1 tablespoon. Brown onion lightly. Add potato. Add liquid from clams and 1/2 cup water, bring to boil and simmer 15 minutes. Add clams, milk and salt and pepper; heat well but do not boil.
