ORIENTAL BEEF & BROCCOLI
(Microwave)
 
1 tbsp. soy sauce
1 tbsp. sherry, optional
1 clove garlic, minced
1/8 tsp. ground ginger
1 lb. boneless beef, cut into strips
1 tbsp. vegetable oil
1/2 c. water
1 tbsp. soy sauce
1 tbsp. sherry
1 tbsp. cornstarch
3 c. broccoli flowerets
Sesame seed, optional
Hot cooked rice

1. In small mixing bowl, blend 1 tablespoon soy sauce, 1 tablespoon sherry, garlic and ginger. Add beef. Stir to coat. Marinate 10 minutes.

2. Place oil in 1 1/2 quart casserole. Microwave at high for 1 minute. Add beef mixture. Microwave at 8 for 3-3 1/2 minutes or until beef is not pink, stirring once. Remove beef with slotted spoon, reserving cooking liquid.

3. In small mixing bowl, blend water, 1 tablespoon soy sauce, 1 tablespoon sherry and cornstarch. Stir into cooking liquid. Stir in broccoli. Cover. Microwave at high for 5-6 minutes until liquid thickens and broccoli is tender, stirring once. Stir in beef. Microwave uncovered at 8 for 30 seconds or until heated through. Sprinkle with sesame seeds and serve with rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
