10 c. zucchini 4 c. onion 4 1/2 c. sugar 1 tbsp. nutmeg 1 tbsp. dry mustard 1/2 tsp. pepper 2 green peppers 5 tbsp. salt 2 1/4 c. white vinegar 1 tbsp. cornstarch 1 tbsp. turmeric Zucchini may be peeled. Discard pepper seeds. Chop finely or grind up zucchini, peppers, and onion. Sprinkle with salt and set overnight. Drain and rinse in colander. Mix remaining ingredients in large pot. Add vegetables, bring to boil and simmer until tender, about 1/2 hour. Put in HOT jars, cover tightly. |
