SATIN CHOCOLATE PIE 
1 c. granulated sugar
3 tbsp. flour
2 tbsp. cocoa
2 tbsp. butter, softened
3 eggs, separated
1 1/4 c. milk
1 tsp. vanilla
1 (9 inch) pie shell, baked
6 tbsp. granulated sugar
1/8 tsp. cream of tartar

In a heavy saucepan combine 1 cup sugar, flour, butter, cocoa, milk and egg yolks blending well.

Cook, stirring constantly, over medium heat until mixture thickens. Remove from heat. Add vanilla and beat smooth. Pour into pie crust.

Preheat oven to 300 degrees. In a medium mixing bowl, beat egg whites, 6 tablespoons sugar and cream of tartar until stiff peaks form. Top pie with mixture.

Bake 15 to 20 minutes or until meringue is lightly browned. Yield 8 servings.
