3 1/4 c. (30 oz. can) pumpkin pie mix 1/2 c. lemon juice 2 tsp. ginger 1 pkg. (1 3/4 oz.) fruit pectin 4 1/2 c. sugar Combine pie mix, lemon juice, ginger and pectin in large saucepan. Heat to boiling, stirring constantly. Add sugar. Heat to full rolling boil, stirring constantly. Continue boiling, stirring frequently, 5 minutes. Skim off foam, if necessary. Pour into prepared jars. Makes 6 cups. |
