BUCTHINI ALL AMATRICIANA 
1 med. onion, chopped fine
3 tbsp. butter
3 tbsp. olive oil
1 slice pancetta (Italian bacon)
1 1/2 c. canned Italian tomatoes
1/2 tsp. hot red pepper
Salt
1 lb. thick hollow spaghetti
3 tbsp. freshly grated Parmesan cheese

Saute the onion in saucepan with the oil and butter. Add the pancetta (bacon) and cook for a minute. Add the tomatoes, chopped hot pepper and 1 1/2 teaspoons salt. Cook over medium heat, uncovered. The sauce is done when the tomatoes and cooking fats separate, about 25 minutes. Cook pasta as directed. Add the sauce, enjoy! Serves 4.
