BEER BATTER FOR WALLEYES 
1/4 c. cornstarch
1/4 c. flour
1/4 c. beer
2 egg whites

Sift together the cornstarch and flour. Add beer and mix until batter is smooth. Beat egg whites very stiff. Fold in beer batter. Season the fish well and dip in the batter. Fry in about 1" of hot oil until fish are well browned on both sides.
