GREEK COUNTRY SALAD 
4 lg. tomatoes
2 cucumbers, peeled
6-8 oz. Feta cheese
1 sm. sweet onion, thin sliced
1 sm. green pepper, thin sliced
1/2 c. Greek olives
1/4 c. olive oil
2 tbsp. red wine vinegar
1/4 tsp. salt
1/2 tsp. dried oregano
Fresh pepper to taste

Core tomato, cut into bite size pieces. Cut cucumbers in half lengthwise and slice. Cut cheese into bite size pieces.

Place tomatoes, cucumbers, Feta, onion, pepper and olives in a salad bowl. Mix oil, vinegar, salt, oregano and pepper. Pour over salad ingredients. Mix lightly. Serve in shallow soup bowls. Top with chunks of cheese, onions and peppers.
