APPLE NOODLE BAKE 
2 c. egg noodles, cooked
4 c. thinly sliced apples
3/4 c. sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 lb. ricotta cheese
2 eggs
1/3 c. honey
1 tsp. vanilla

In large bowl mix together apples, sugar, cinnamon and nutmeg. IN second bowl mix together cheese, eggs, honey and vanilla. Fold cooked noodles into cheese mixture. Spread 1/2 in 2 quart buttered casserole. Put contents of first bowl on top of noodle mixture. Cover with rest of noodles. Dot with 2 tablespoons of butter. Bake at 350 degrees for 50 minutes or until set. Serve warm or cold. Serves 12 or more.
