BAKED FISH PARMESAN | |
1 1/2 lbs. cod or other type white fish 1 pkg. (about 30 crackers) Ritz crackers, crushed 1 tbsp. sugar or brown sugar (either one is fine) 1/2 tsp. salt 1/2 tsp. celery seed 1/4 tsp. pepper 5 tbsp. grated Parmesan cheese 5 tbsp. butter 4 tbsp. lemon juice 2 tbsp. slivered almonds (optional) Preheat oven to 350 degrees. Wash fish and leave wet. Grease 12x8 baking sheet. Lay fish on sheet with thin end of fish rolled under to stop it from drying out. Squeeze about 2 tablespoons of lemon juice on fish. Crush crackers into crumbs in a bowl. Mix in 1 tablespoon sugar, 1/2 teaspoon salt, 1/2 teaspoon celery seed, 1/4 teaspoon pepper, and 2 tablespoons Parmesan cheese. Mix well. Sprinkle cracker mixture over fish. Melt 5 tablespoons butter with 2 tablespoons lemon juice. Pour over cracker crumbs on fish. Sprinkle 3 tablespoons Parmesan cheese over crumb mixture. Also sprinkle 2 tablespoons slivered almonds on crumb mixture (optional). Bake on middle rack about 20 minutes. Check middle of fish to check for doneness. |
