SALMON LOAF 
2 cans (15 1/2 oz. each) salmon, drained (save the liquid)
Milk
Cracker crumbs
2 tbsp. lemon juice
2 tbsp. chopped onion
1/4 tsp. salt
1/4 tsp. pepper
2 eggs

Mix salmon and eggs. Add enough milk to salmon liquid to make 1 1/2 cups. Stir liquid mix remaining ingredients into salmon. Spoon lightly into greased loaf pan 9 x 5 x 3 inches. Bake uncovered in 350 degree oven until done, about 45 minutes. Garnish with lemon wedges if desired.
