GOLDEN CORN FRITTERS | |
1 c. self-rising flour 1 tsp. sugar 1 tsp. salt 1/2 tsp. pepper 2 eggs, beaten 1 1/2 c. fresh corn, cut from cob (about three ears) 1/2 c. milk 2 tsp. oil Hot vegetable oil for frying Combine first four ingredients in a large mixing bowl; mix well and set aside. Combine eggs, corn, milk, and 2 tablespoons vegetable oil; mix well. Stir corn mixture into dry ingredients. Drop mixture by rounded teaspoonfuls into oil heated to 375 degrees; cook fritters until golden, turning once. Makes 3 dozen. |
