FANCY QUICHE LORRAINE | |
5 eggs 1 c. milk Dash of pepper Fresh nutmeg 1/2 lb. Gruyere cheese 1/2 lb. bacon 1 c. heavy cream 3 leeks 10 inch deep quiche dish 10 inch deep pie crust Cook bacon in water, cover, bring to boil. When cooked, remove fat, cut bacon into small pieces. Cut up bulb of leeks. Spread bacon and leeks at bottom. Slice cheese and put in next. Beat together 4 eggs and 1 yolk, cream and milk. Add dash of pepper and nutmeg to taste (less than 1/4 teaspoon each). Beat hard and pour into pie. Bake at 450 degrees for exactly 12 minutes, then turn down to 350 degrees for 30 to 40 minutes. Done when golden brown on top. |
