SCALLOP PINEAPPLE KABOBS 
2 tbsp. lemon juice
1/4 c. soy sauce
Salt and pepper to taste
1/2 tsp. paprika
1/4 tsp. garlic powder
Sugar substitute to equal 2 tsp. sugar
1 lb. sea or cape scallops
1/2 fresh pineapple, cut in lg. size pieces
1 green pepper, cut in 1 1/2 inch pieces
8 oz. cherry tomatoes

Combine first 6 ingredients, blend well, add scallops, pineapple, pepper and tomatoes to mixture and marinate for 30 minutes. Drain and arrange scallops, pineapple pepper and tomatoes alternately on skewers. Broil about 8 minutes. Makes 2 servings.
