PINEAPPLE SCALLOP KABOBS 
1/2 c. Pineapple Juice
2 tbsp. Soy Sauce
1 tbsp. Lemon Juice
10 oz. fresh Scallops
2 canned Pineapple Rings
1 Red Pepper, cut into 1 inch squares
1 Green Pepper, cut into 1 inch squares
8 Cherry Tomatoes
1 c. cooked Rice

Combine Pineapple Juice, Soy Sauce, Lemon Juice in a large mixing bowl. Add Scallops and Pineapple Rings; toss to coat. Marinate, covered, in a refrigerator for 1 hour, stirring occasionally. Preheat broiler. Remove Scallops and Pineapple Rings from the marinade, discard the marinade.

Cut each Ring into quarters. Thread Scallops, Peppers, Pineapple and Tomatoes on 2 skewers. Arrange on broiler rack in a broiler pan. Broil for 8 minutes or until Scallops are opaque, turning once or twice. Serve over Rice.
