COCONUT PIE 
1 (9-inch) baked pie crust
4 tbsp. sugar
5 tbsp. flour
1/4 tsp. salt
2 c. milk
3 egg yolks
1 c. flake coconut (Baker's)
2 tsp. vanilla
1 tbsp. butter
3 egg whites
6 tbsp. sugar
1/2 c. flake coconut

Combine sugar, flour and salt in the top of a double boiler. Add milk and egg yolks, beaten together. Cook over boiling water for 10 minutes or until thick, stirring constantly. Remove from water; add 1 cup coconut, vanilla and butter. Pour into a baked pie crust. Beat egg whites until foamy. Add sugar (1 tablespoon at a time), beating until sugar is blended and mixture stands in a peak.

Bake at 350°F for 15 minutes or until browned.
