ENCHILADA STEAK 
15 oz. brown ground beef
1 c. chopped onion
1 c. salsa
1 tsp. chili powder
1 c. reduced calorie sour cream
2 tsp. olive oil
1 c. chopped red bell pepper
1 tbsp. chopped coriander
6 (6 inch) corn tortillas
4 oz. cheese

Heat olive oil. Add onion and 2/3 cup red bell pepper. Add ground beef; stir in salsa, coriander and chili powder. Simmer 8-10 minutes.

Preheat oven to 350 degrees. Spray 9-inch pie plate with non-stick spray. Put 2 tortillas down. Top with 1/3 of meat mixture, 1/3 of sour cream and 1/3 cheese. Repeat to make 3 layers. Top with remaining peppers; cover with foil. Bake 20-25 minutes. Let stand 10 minutes before serving.
