CHOCOLATE ZUCCHINI BREAD | |
4 sq. unsweetened chocolate 3 c. flour 1 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 4 eggs 3 c. sugar 1 1/2 c. salad oil 3 c. grated raw zucchini 1 c. chopped nuts 2 tsp. vanilla Beat eggs until thick and light. Add sugar, oil, melted chocolate and vanilla. Beat until well blended. Mix dry ingredients. Add nuts and zucchini; blend. Pour into 2 large pans greased and floured loaf pans or 3 small pans. Bake at 350 degrees for 1 hour and 15 minutes. Freezes well and stays moist. Tastes like brownies. |
