BANANA NUT CAKE 
3 1/2 c. sifted flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tbsp. lemon juice
2 c. mashed bananas
2/3 c. canola oil
1 1/2 c. sugar
3 eggs
3/4 c. milk

Heat oven to 350 degrees. Grease cake pan. Sift together flour, baking powder, baking soda and salt. In a small bowl, stir lemon juice into the mashed bananas. In a large bowl mix butter and sugar until blended. Add eggs one at a time, mixing well after each addition.

Add sifted dry ingredients to butter mixture alternately with milk. Fold banana and walnuts into batter. Pour batter into tube cake pan or two bread pans. Bake 1 hour or until cake tester inserted into center of cake comes out clean.
